Seasonal Mascarpone Pie 9” - uses 1 homemade crust


1 1/4 cup whipping cream

8 oz mascarpone

2/3 cup sugar

1 tsp vanilla extract.

Topping: 5 oz of your favorite seasonal jam OR Chocolate, Butterscotch or Caramel sauce.


Whip cream with 1/3 cup sugar until firm peaks form. In a separate bowl, cream mascarpone, vanilla and 1/3 cup sugar. Combine mascarpone and cream mixes. Spread filling into pie crust. Whisk jam to soften it and spread on top of the pie. Refrigerate overnight. Variations for Filling: 1) Substitute almond extract for vanilla extract. Add sliced almonds on top. 2) Substitute 2 TBSP of your favorite liquor for Vanilla Extract.
