Graham Cracker Coconut Chocolate Chip Muffins
Moist muffins topped with coconut graham cracker crumble. 12 muffins.
2 cups graham crumbs
1 1/2 cups flour
1 Tbsp baking powder
1/2 tsp salt
1/2 cup light brown sugar
1 tsp cinnamon
1 cup milk
1/2 cup coconut oil
2 tsp vanilla extract
1 cup mini chocolate chips.
1/4 cup flour
1/4 cup light brown sugar
1/3 cup graham crumbs
1/2 tsp cinnamon
3 TBSP unsweetened shredded coconut
1/4 cup softened butter
Crumble: Mix all dry ingredients, then mix with butter until crumbly. Muffin: Mix graham crumbs, flour, baking powder, salt, cinnamon and brown sugar. Hold. In a mixer on medium speed combine milk, coconut oil, egg and vanilla extract. On low speed, add dry ingredients to wet and mix until just incorporated. Add chocolate chips and mix in on low speed (about 30 seconds). Scoop mix into greased muffin pan. Sprinkle crumble over the top of the muffins. Bake at 425 for 5 minutes, then lower heat to 375 for 15 minutes
